Northern Blue Whiting (Micromesistius poutassou) is a cold waters fish, from the Gadidae family (like Cod or Whiting), we catch in the North-East Atlantic (FAO zone 27 sub-areas: I- IX, XII and XIV).
Aboard our vessel, within maximum 8 hours after its catch, we process its strong-protein-index flesh into one of the most qualitative surimi base raw material available on the market. Featuring gel strength (from 600 to >100) and whiteness (around 76) similar to Alaska Pollock, but with a higher elasticity (from >1 to >1.50), and without enzyme activity (contrary to Pacific Whiting - Hake), its industrial use is simple and consistent.
It is particularly ideal to manufacture products such as shredded surimi, Japanese Kamaboko and Chikuwa, squid rings and Baby eel imitations, moulded products with setting process or as blending to improve the elasticity of the paste … It also enables to make products without egg white, meaning without allergens, easily.
We offer different quality grades to adapt to your use, and free from polyphosphate or sorbitol options to meet clean label recipes expectations.
