We select the most beautiful forms from our Special grade oysters (already aged 3 years).
Then we position these fully grown oysters and line them up at the upper edge of the estuary for 1 additional year. The provision of huge quantities of freshwater and low tide can limit the growth of the oyster and develop abundant flesh.
