But what makes this pure butter madeleine so good? It's our secret recipe, with rigorously selected ingredients: free-range eggs, flour from France, good butter and a pinch of salt from the Ile de Ré. The "madeleine pur beurre" is made with butter only, giving it a soft texture and a rich, buttery taste. A classic of French pastry-making and savoir-frais.
What also makes this recipe a success is its near-perfect lumpiness. Preparation is meticulously controlled to ensure that every madeleine is the same height, the same shape and, above all, has a pretty bump on top.
