Tsarskaya is a premium Speciale oyster thanks to a maturation of 3 up to 6 months at seaside. It is powerful and briny in mouth at first, then when chewing the flesh, it releases a sugary flavour with subtlies notes of almond milk.
Due to a brief storage on the foreshore, ou emblematic oyster Saint Kerber is recognizable by its typical briny flavour from the Bay of Mont Saint Michel. Its flesh is firm and reveals round notes during the tasting.
