La Cancalaise promotes a low-density farming model that respects the fish and their environment. Sea farming produces fish with a rich taste and a hint of iodine.
All year round, we offer slices of carefully smoked trout, raised in sea and fresh water, with a guaranteed 14-day shelf-life.
From May to June, we also offer freshly caught sea-raised trout fillets, with all the taste qualities included.
