Terroirs
The garrigue soils, from quaternary sediments, mainly limestone soils veined with clay. Mediterranean climate, hot and dry, under the mistral wind, which allows the vines to dry well after rainy periods.
Winemaking
Gentle pressing, 100 % of vinification and ageing is made in barrels (2 and 4 wines old), fermentation with indigenous yeasts. Stirring of the lees only during the first month to keep all primary aromas. Aged in barrels on lees for 10 months for bottling before summer.
No malolactic fermentation to keep freshnes
2021 Vintage
The 2021 vintage is a late vintage. It was a small harvest. The wine is fresh with reasonable alcoholic degrees. We find the notes of white flowers and lime blossom characteristic of this cuvée with addition of fruits in syrup, pear, and slightly toasted almond. Nice length.
