Our organic cocoas are selected in Latin America, mainly in Peru and the Dominican Republic, for their exceptional character: fine and aromatic cocoas, as powerful as they are subtle. On site, the beans are roasted then crushed to obtain the cocoa mass - the essential ingredient for our chocolates because it gives our chocolates their distinctive tastes. The cocoa mass is thus easier to transport with our cargo sailboat.
In the chocolate factory in Morlaix, we make chocolate “covers” using the conching technique, which makes Grain de Sail a cover maker and a chocolatier (a rather rare quality in the chocolate industry). The different milk and dark couvertures (Cocoa 37%, 45%, 55%, 62%, 75% and 85%) are conched (refined) and serve as the basis for our chocolate recipes.
