The PDO (Protected Designation of Origin / in French = AOP) label is a European label which guarantees that every step of the product’s preparation is carried out in a set geographic area corresponding to the product’s region of origin, and using recognised techniques and particular specifications inspected by public authorities and independent third-party bodies.
